A sheet pan is a piece of metal, and almost everything that makes one good or bad comes down to two things: what the metal is, and what holds the edge of it straight.
Bare aluminum conducts heat faster and more evenly than steel, which is why commercial kitchens use it and why it browns cookies uniformly instead of scorching the row nearest the element. Warping is the other half. A thin pan with a folded-over edge expands unevenly under a 425°F oven and buckles — the bang you hear ten minutes into preheating. A rim built around a steel wire or a galvanized steel core holds its shape, and that single detail separates a pan that lasts decades from one that rocks on the counter after a year.
Coatings are a genuine trade rather than an upgrade. Nonstick releases better and washes faster, and it is a wear item with a finite life; bare aluminum sticks more, needs parchment, and does not wear out. You want both, which is why this list is three pans and not one.

The pans are pure aluminum rather than aluminized steel, which is the reason they brown evenly — and, because there is no coating and no plating, Nordic Ware states they will never rust. There is nothing on the surface to scratch off, so a metal spatula is not a problem.
The rim is the part worth paying attention to. Nordic Ware encapsulates a galvanized steel wire inside the rolled edge, which is what resists the buckling that kills cheaper pans at high heat. Exterior dimensions are 17.9 × 12.9 × 1 inches with a 17.1 × 12.1-inch interior — a true half sheet, so standard silicone mats and pre-cut parchment fit without trimming.
The honest cost of no coating is that things stick. Eggs, cheese, anything sugary — you will use parchment, and you should plan on it. Nordic Ware also recommends hand washing; dishwasher detergent discolors bare aluminum, and acidic foods like tomatoes or lemon will darken the surface over time. $25 from AmazonThe surprise here is the price: two pans for $25, which is eight dollars less than the Nordic Ware pair. It is not a downgrade. These are heavy-gauge aluminized steel — steel for rigidity, aluminum cladding for conductivity — and USA Pan makes them in Pennsylvania.
Two construction details do the work. The base is corrugated rather than flat, which USA Pan says circulates air under the food for easier release and more even baking, and which also stiffens the pan the way a folded sheet of paper is stiffer than a flat one. A steel wire runs through the rim, the same anti-warping approach as the Nordic Ware. The coating is Americoat, USA Pan's proprietary silicone-based nonstick, and it is what you are actually buying this pan for — roasted vegetables and sticky glazes come off it without parchment. The baking surface measures 17.25 × 12.25 inches.
Two caveats, and the first is the one nobody mentions. The corrugated base means the pan is not flat, so anything you want a perfectly smooth bottom on — a rolled shortbread, a sheet cake you plan to invert — picks up a faint ridge pattern. The second is that a coating is a consumable. Treated gently it lasts years, but it will eventually wear, and the Nordic Ware never will. If you want one pair of pans to hand down, buy those; if you want the pair you actually reach for on a Tuesday, buy these.

$23 from AmazonA half sheet is the wrong pan more often than people admit. Toasting a half cup of nuts on one wastes most of the oven, and a 17.9-inch pan does not fit in a countertop oven at all. The quarter sheet is the same construction scaled down: pure aluminum, the same reinforced encapsulated steel rim, exterior dimensions of 12.9 × 9.6 × 1.1 inches with a 12.1 × 8.8-inch interior.
That footprint is the whole argument. It fits most countertop and air fry ovens, it fits two salmon fillets or a single head of broccoli without the food spreading thin and drying out, and two of them fit side by side on one rack of a full-size oven — which is how you roast two things at two temperatures without them touching. At $23 for a pair, it costs about what one decent half sheet does.
The limit is obvious and worth saying plainly: this is a second purchase, not a first one. It will not hold a batch of cookies, a whole chicken, or a sheet-pan dinner for four. Buy the half sheets first. Buy these when you notice how often you are using a pan four times bigger than the job.
